
Charlote aux Poires, I made a less beautiful version of this for my pastry final. This is lady finger crust and top with a pear mousse filling. The thing on the top is a pear which has been sliced and blowtorched (! they really love the blow torch down here, it's crazy!) and white chocolate leaves...that I made, all by myself, thank you very much...Gave this one to the internet guy before they closed the cafe.
